My Famous Easy Enchilada's

Hi there ladies and gents, I thought that I would share mine and my family's favorite foods, and this is one of them! Its easy cheap and feeds a lot of people.

Easy Enchiladas:

 3-4 med. boneless/skinless chicken breast
2 blocks cream cheese
1 jar of MED. salsa
tortillas-you may choose those to your taste.
1 large bag of Mexican cheese. 

How to make:
Boil your chicken until completely cooked, at this point you should get your cream cheese out of fridge and bring to room temp. Start your prep table and large bowl to mix in. 
 
After this is done you should mix your cream cheese and salsa in bowl, and leave sit. (it may not mix right away but the warm chicken will help) When chicken is done lay on clean surface and  let cool till you can handle with your hands to shred the chicken. When cooled wash hands , and use a sharp knife and start cutting and shredding the chicken and put straight into bowl with other ingredients. 
-warm tortillas at this point as you are ready to role-

Use a healthy couple spoonfuls of mixture into the middle of tortilla and roll then place into a large baking pan. 


Then with the remaining mixture poor evenly over the top.


Cover the rest of that with the bag of Mexican cheese and bake at 350ยบ Fahrenheit for around 20-25 min or until cheese is completely melted and crispy.

Vacation



Hi there all, just want to let you know due to the ongoing event going on in my world right now I am declaring a vacation, well a "work"cation. Ill be back and writing come the first of the month, I am sorry its has not been so eventful on here but I plan to change that as we get settled into our new home. Joni's Journey to Motherhood Follow up...

A Desire for The Great Letdown…Follow up
Good evening, ladies. It is with a heavy heart I write this follow up note…
At nearly five weeks along, I lost another baby this morning. In the throws of physical pain all day I continually pour over the last few weeks and all I can think is “I did everything right!” I even picked up my progesterone suppositories and began using them in hopes that that would help. I prayed daily, all day…for God to work a miracle. 
As ridiculous as it may seem, alongside the pain and tears today, all I can seem to think is “I want to adopt! But how!” I will mourn this loss, and somehow, I hope and pray, be a better person and mother because of it. From this I hope to re-gather my strength to look into adoption…find out more about an interest-free loan I heard about a few months ago…and look further into the two agencies I had come across and decide which to adopt through and begin that process. I am nervous…and scarred…and hopeful, somehow.
I would appreciate any prayers, advice or knowledge you may have. I don’t know what is going to happen next and I don’t know how it is going to happen or how long it is going to take but I am ready and willing and able to be a mother, and I want that to happen.

Married Fat ** UPDATE # 1 **

As all you know I am a on mission to loose weight, not just that either but to loose, quit smoking and stop allowing myself to engorge myself with food. I didn't realize till about a month ago that food was actually a addiction to me. As a addict of many things (not drugs :))
it didn't surprise me that I allowed food to control me as anything else for a addict does. Just like a addict with their drugs and alcohol.

Needless to say it was a eye opener to me. I have allowed myself just a small portion of my weakness to tie me over (ice cream). My snacks normally include pop corn no butter and a little of that cheese powder stuff. I tend to eat more protein now as carbs have been a BIG issue for me as I LOVE LOVE LOVE pasta! Did I mention I love pasta! I know most woman will agree that throwing a noodlie mix of something is a lot easier then making a full lunch or dinner. I have got myself out of that rut. More meat and more veggies. Bless my husbands heart as I am inspired by him to as he is on a mission as well and is riding his BIKE to work that is 6 miles one way. 

On a positive note I believe that I have lost 2 pounds and actually wore a swim suit yesterday. I would post pictures if I had them but as two pounds is great its not picture worthy as I don't think you as my reader could see that. But as soon as I loose 10lbs Ill be posting pictures or when I get into my pre pregnancy with Jack jeans witch ever comes first. Well till them Ladies and Gents, I hope you have a great 4th of July and eat healthy and smart this holiday weekend we all know how great those egg and potato salads are! 

Stay STRONG. Stay on course. Eat Well. Be positive!
