Hi there ladies and gents, I thought that I would share mine and my family's favorite foods, and this is one of them! Its easy cheap and feeds a lot of people.
Easy Enchiladas:
3-4 med. boneless/skinless chicken breast
2 blocks cream cheese
1 jar of MED. salsa
tortillas-you may choose those to your taste.
1 large bag of Mexican cheese.
How to make:
Boil your chicken until completely cooked, at this point you should get your cream cheese out of fridge and bring to room temp. Start your prep table and large bowl to mix in.
After this is done you should mix your cream cheese and salsa in bowl, and leave sit. (it may not mix right away but the warm chicken will help) When chicken is done lay on clean surface and let cool till you can handle with your hands to shred the chicken. When cooled wash hands , and use a sharp knife and start cutting and shredding the chicken and put straight into bowl with other ingredients.
-warm tortillas at this point as you are ready to role-
Use a healthy couple spoonfuls of mixture into the middle of tortilla and roll then place into a large baking pan.
Then with the remaining mixture poor evenly over the top.
Cover the rest of that with the bag of Mexican cheese and bake at 350ยบ Fahrenheit for around 20-25 min or until cheese is completely melted and crispy.
And of course ENJOY!!!!!

I do something very similar and thought I would share my variation. (I kind of just wing-it everytime I make it so my measurements are not exact, just my guestimation.)
2-3 boneless/skinless chicken breasts, thawed & cut into 1x3 inch strips.
1 Medium onion, chopped
Spray non-stick pan with non-stick cooking spray of your choice, sautee onion & chicken together over med to med-hi heat until meat is cooked through. (about 10 minutes)
While that's cooking I prepare a spanish rice dish like Knorr rice sides or rice-a-roni, prepare as directed. Set aside.
Sauce:
1-2 Tablespoon taco seasoning
8 oz cream cheese, softened.
4 oz sour cream
16 oz jar your favorite salsa (med or hot work best)
Beat taco seasoning, cream cheese and sour cream together. I use my hand mixer so there are no lumps. Mix salsa in, should be pourable sauce.
Pour 1/3 of sauce mix over hot chicken, stir until all meat is coated.
Spoon chicken into tortillas, top with spanish rice (You can save 1/2 of the rice & serve as a side dish if you wish.) & healthy size pinch of shredded sharp cheddar cheese.
Roll up, place in baking dish pour remaining sauce mix over top making sure all exposed tortilla is covered, then sprinkle top with 1 cup shredded sharp cheddar cheese. Bake in 350degree oven for 30-40 minutes or until hot & bubbly.
